A Touch of Romance: Homemade Rose Syrup

This Valentine’s Day, elevate your celebrations with a touch of luxury and spice. Inspired by the London candle,—with its elegant blend of rose, saffron, and green cardamom—this homemade rose syrup with saffron and green cardamom is a refined addition to your treats. Perfect for drizzling over desserts, mixing into drinks, or simply enjoying in a cup of tea, this syrup is a sophisticated way to indulge in the spirit of romance.

Ingredients:

  • 1 cup fresh, pesticide-free rose petals
  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 3-4 green cardamom pods, lightly crushed
  • 1-2 threads of saffron

Instructions:

  1. Prepare the rose petals: Gently rinse the rose petals to remove any dirt, ensuring they are pesticide-free. Set aside.

  2. Infuse the saffron: In a small bowl, warm the water slightly (just enough to release the colour and fragrance from the saffron threads). Soak the saffron in the warm water and set aside to infuse.

  3. Simmer the syrup: In a medium saucepan, combine the water, sugar, and lightly crushed cardamom pods. Bring to a simmer, stirring occasionally to dissolve the sugar.

  4. Add the rose petals: Once the sugar has dissolved, add the rose petals to the saucepan. Let them simmer gently for 5-7 minutes, allowing the floral fragrance to infuse the syrup.

  5. Incorporate saffron: Add the saffron-infused water to the saucepan, stirring gently. The rich golden colour of the saffron will blend with the rose petals, creating a beautiful hue.

  6. Strain the syrup: Once the syrup has taken on a soft pink-golden colour, remove from heat and strain out the petals and cardamom pods. You can use a fine mesh strainer or cheesecloth to ensure a smooth syrup.

  7. Finish with lemon juice: If desired, stir in the lemon juice to balance the sweetness with a hint of tartness. Let the syrup cool to room temperature.

  8. Store and enjoy: Transfer the finished syrup to a glass bottle or jar and refrigerate. It will keep for up to two weeks, ready to be added to drinks, desserts, or even a luxurious drizzle over fresh fruit.

The combination of rose, saffron, and cardamom offers a multi-layered, luxurious flavour profile that will captivate your senses. Drizzle it over pancakes or waffles for a decadent breakfast, or use it can be mixed into hot and cold drinks for a unique twist.

Pair this exquisite syrup with the warm glow of the London candle, where the fragrance of rose, saffron, and cardamom will complement your Valentine’s Day celebration with a touch of romance and sophistication.
