Rose Jam: A Sweet Delight for Valentine’s Day

Inspired by the romantic, luxurious scents of New Flame’s London candle, with its delicate blend of rose and vanilla, this homemade rose jam is the perfect treat for your Valentine's Day celebration. It’s a fragrant, elegant preserve that captures the essence of love, and it pairs beautifully with fresh pastries, scones, or a simple slice of toast.

Ingredients:

  • 3 cups fresh rose petals (make sure they are pesticide-free)
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon rosewater 
  • 1 teaspoon pectin (optional, to thicken)

Instructions:

  1. Prepare the Rose Petals:

    • Begin by gently rinsing your fresh rose petals to remove any dirt or impurities.
    • Trim the white base off the petals to avoid any bitterness, leaving just the delicate pink or red parts.

  2. Infuse the Roses:

    • Place the rose petals and water into a saucepan over low heat, stirring gently as they begin to soften.
    • Allow the petals to simmer for about 5 minutes, letting their fragrance release into the water.
    • Once soft, remove the petals from the saucepan, leaving behind the infused water.

  3. Make the Rose Syrup:

    • In the same saucepan, add the rose-infused water, sugar, lemon juice, and optional rosewater.
    • Stir over medium heat until the sugar has dissolved, and the mixture begins to thicken slightly (about 10-15 minutes).

  4. Thicken the Jam:

    • If you’d like a thicker consistency, add pectin and continue to cook for another 5-10 minutes, stirring often.
    • Keep testing the consistency by placing a spoonful on a cold plate – it should set to a syrupy, jam-like texture.

  5. Jar the Jam:

    • Pour the hot rose jam into sterilised jars while still warm, sealing them tightly.
    • Let the jam cool to room temperature before storing it in the fridge. The jam will last for up to 2 weeks.
